The Bremerhaven sea fish cooking studio from the outside

On Saturday, 25 May 2019 the live cooking shows of the Seefischkochstudio will take place from 1 pm and on Sunday, 26 May 2019 from 12 am. A pontoon will be set up behind the steam icebreaker "Wal" so that you can sit down comfortably before the cooking show. The following recipe makes you taste the inspiring shows. Enjoy your meal!

Cod fillet cooked in lemon oil on a colourful barley risotto with shiso cress

Step 1 - The ingredients 

4*150 g cod fillet, best cod join
300 ml lemon oil or rapeseed oil
1 lemon, untreated
1 lime, untreated
1 small onion
100 g carrots
100 g celery
½ Packet pearl barley, medium
100 g Parmesan cheese, freshly planed
100 ml vegetable broth
1 small bunch smooth parsley
1 bowl Shiso cress
salt and lemon pepper to taste

Step 2

Grate the peel of the lemon and lime thinly and mix with the lemon oil. Clean the vegetables and cut everything into fine cubes separately.

Cook the barley in salted water with a little curcuma and then rinse with cold water.

Step 3

Warm the vegetable stock slightly.
Portion the fish and season with salt, then put the lemon oil in a frying pan and heat to 70°C.

Then place the fish fillets in the pan. Cover with a lid and cook for about 20-30 minutes (depending on how thick the fillets are).

Step 4

Sweat the diced vegetables in some oil, then add the cooked barley and pour in some warm vegetable stock.

Stir in the freshly sliced Parmesan cheese.
Heat everything together to a risotto.

Step 5

Arrange the risotto on a plate, remove the cod fillet from the oil and drain briefly over a towel.

Step 6

Then add to the risotto. Garnish with Shiso cress and serve.

Serve with a green salad with a vinegar-oil dressing.
